Your challenge is to mat a photo - - but, before sticking your photo down, cut out the center of the mat and use that paper/cardstock somewhere else on your LO. You can use it as-is, or you can make it into an embellishment. And yes, you can use double sided paper...

I do this a lot to get better use out of my paper. Here is mine. cut out the mat and used it on opposite side and put Scotland on it.

I actually matted my title block and used the center to mat my journaling block. I hope that's OK!
